However, I find that Clos du Bois Chardonnay pairs wonderfully with a rich tomato sauce. Any pair of chopsticks will suffice since I try to be a good host by giving guests a choice.

Warm the oil in a pan of an appropriate size by heating it over medium heat. Include sausage. When the sausage has been cooking for approximately five minutes and the center is no longer pink, use a spatula to chop it into bite-sized pieces.
Stir in the onion and garlic, then carry on cooking for another three to four minutes, or until the onion reaches a translucent state.
Combine some chopped tomatoes with some heavy cream and mix well. Continue to cook, stirring occasionally, for about five minutes, or until the sauce reaches the desired thickness.
While the sausage is cooking, the pasta should be boiled until it reaches the al dente stage in a large pot of salted boiling water (al dente).
After the process is complete, pour off the liquid and keep aside 1 cup of it for later use. It is recommended that the pasta be placed back into the pot in which it was cooked.
Add the sausage and sauce combination to the pasta and toss over medium heat until the sauce covers the pasta.
If the mixture seems dry, add a quarter of a ladleful of the cooking liquid that was reserved from the pasta. Just before serving, top each portion with freshly grated parmesan and chopped fresh basil.
